Cooking in Ecuador

The food in Ecuador is so fresh it's ridiculous. Most, if not all, is organic. The chicken and pork are the best tasting and most tender meats. Eggs are straight from farm to market with no preservatives, and guess what ... the eggs here do not have to be refrigerated. Don't get me started on the fresh veggies!  

Here is what I cooked for dinner tonight.
